Lesley can I have your mayonnaise recipe please

Lesley I have looked and cannot find your mayonnaise recipe.

 

Your two jars did look really nice. :D:D

 

I would like to have a go. I have got the bread,butter and pasta down to a T now :roll::roll:

 

I thought it time to feed everyone something else :shock: It has to be an easy and fool proof method though.

 

You may have noticed it takes me several goes to get it right :?

Clare here is a recipe for

 

Mayonnaise........

 

2 Egg yolks.

Salt and pepper.

1/2 pint of olive oil.

Teaspoon of dry English mustard.

a squeeze of lemon juice.

1 tablespoon of white wine vinegar.

 

Put the yolks into a bowl with a pinch of salt and the mustard and beat well with a wooden spoon. Add the oil, literally a drop at a time, beating all the time. The mixture should be very thick by the time half the oil is added. Beat in the lemon juice, resume pouring in the oil, going more quickly now, but alternating the dribbles of oil with small quantities of vinegar.

 

Note; If the mixture curdles, another egg yolk should be beaten in a seperate bowl, and the curdeled mixture beaten into it drop by drop.

Lesley don't be cross :shock::shock:

 

I did ask in the recipe section but I thought It might have got lost so I posted a new thread to request.

 

I've just read yours though and that sounds really yummy and you don't say I have to use a spoon to make :D

 

I will get my cider vinegar and give yours a bash first. Promise :wink:

 

You know it takes me several recipes and lots of questions to get it right :oops:

Well just to report that I have made Lesley's recipe first. The first batch split just as I thought it looked ready :evil::evil:

 

I started again, this batch has come out lovely :D Its no as light in colour as your though Lesley so I hope I have blitzed it long enough.

 

Egg and mayo sandwich for me later today :)

Clare* - we have one chicken whose yolks are paler than the others, I started using her yolks so that the mayo. looked like Hell (:twisted:) mans mayo. It's just habit now.
