CatsCube Posted February 18, 2008 Share Posted February 18, 2008 I have just been making my mums award winning gingerbread, its a fav of mine and as far as Im concerned the perfect receipe as unlike most, it doesnt just become a hard buscuit but remains slightly soft and cheewy in the middle. Gingerbread Ingredients: 350g plain flour 1tsp ground ginger 1tsp bicarb 175g soft light brown sugar 100g butter 4 Tbsp golden syrup 1 egg sieve flour bicarb and ginger together then rub in the butter. Add the sugar and mix. warm syrup to make it easier to spoon and add this and the beaten egg to the mix, stir till starts to form a ball then kneed on a floured surface. roll out to about 4mm thick and cut into desired shapes and place on floured baking trays. cook on Gas mark 5, 190 degrees for 10-15 mins till done and leave on rack to cool.
