Jules. Posted April 18, 2008 Share Posted April 18, 2008 When I made the TARDIS birthday cake I made a Madeira cake mixture. I have only done it the once, & I used gluten-free flour as the birthday man has an intolerence to wheat. The recipe is essentially a Victoria sponge one, ie 6oz butter 6oz castar sugar 3 eggs 8oz self raising flour approx 3 tablespoons of milk (to make a soft dropping consistency) The recipe calls for a deep round 6in cake tin, bake for 1 1/4- 1 1/2 hours at 160C, 325F, Gas 3. Leave to cool in the tin for 5 mins before cooling on a rack. I made my cake in a square silicone tin & it was fine. This recipe is from my really old Hamlyn cook book!
