Here is a recipe for a low GI orange cake taken from Antony Worrall Thompsons book....... Orange and Almond cake 2 large thin-skinned oranges 200g (7oz) golden caster sugar 200g(7oz) ground almonds 1/2 teaspoon baking powder 6 large eggs juice 1 lemon You will need a 9inch cake tin greased and lined. Put the oranges in a pan and cover with cold water.Bring to the boil, reduce the heat, cover and simmer for 2 hours. Top up the water if neccessary so they are always covered. Remove from the water and leave to cool. Preheat the oven to 180 degrees C. Cut the oranges into chunks and remove pith. Put the oranges in a food processor with all the other ingrediants and blitz until well mixed. Transfer to the prepared tin and bake for 45-60 mins until risen and firm. keep this flour free cake in the fridge in an air tight container and eat within four days.
