chocchick
Looking for flan/quiche recipes/experts. I know there is a bacon and eggs one from Superkate, any others? I have bought cases as my first attempt at quiche. I tried a goats cheese/leek recipe, but want a different filling. Also can creme fraiche be substituted for cream in most recipes, as it could in the one I used? My recipe said layer cheese/leek, then put the egg and creme fraiche mixture over the top, but it sat on top as there was so much filling, and overflowed*. Is it normally mixed, or did I just have too much filling for the case? *it was very nice though
Snowy
Hm, I just put in whatever combination I have that I think will taste nice, then just use a milk and egg mixture for the 'custard' as I never have any cream in the fridge. Also, if I have got creme fraiche, plain yoghurt or fromage frais I will chuck that in as well. My favourite filling is red onions, broccoli and whatever cheese I have to hand. chickencam
How do you cook the onions? I made an onion tart a couple of months ago and it was far too sweet. I think I sweated the onions for too long
