Lemon Curd

Ok, I know from reading other threads that this is a very popular thing to make with surplus eggs, but wondered how easy is it to make? I'm pretty much a total novice in the kitchen, especially with regards to sweet things.

 

On the BBC food site it says this

 

Ingredients

4 lemons, rind and juice

4 eggs

110g/4oz butter

450g/1lb sugar

 

Method

1. Grate rind of lemons and squeeze out juice. Put sugar, rind and juice, butter and beaten eggs into a large basin on top of a pan of simmering water. Stir with a wooden spoon until thick and curd coats the back of the spoon. Pour into warm sterile jars, cover, seal and label. Refrigerate.

 

Surely that can't be it?????!!!!!

Thanks Kate, I'm just reading through that thread, but you all seem so cook savvy on there, so wondered for a total novice, thought it would be like making jam so am wary that it seems a lot easier - although to be honest I don't have much clue about how to make jam except it takes along time and you need a thermometer!

Cool, def will do, need to build up a surplus of eggs, after scrambled egg disaster using 8 eggs!!! Did it to use them up unfortunately went wrong so binned it!!

PS just looked and jam isn't as hard to make as I tohught but will def start with lemon curd - and I've borrowed my mum's breadmaker and it has a jam setting!

You don't need a thermometer to make jam - and the ones which set easily are easy to make. I use Jam Sugar to make any of the slightly more 'difficult' ones.

 

Kate's Lemon Curd recipe is by far the easiest I've ever made - none of the standing over a double sauceapn or bowl over hot water.......

Hi Helen

 

I'm a complete dude when it comes to cooking but have found jam making easy. I made loads of blackberry jam last year, then put it in jars, made my own labels, added gingham and ribbon for that country look to the lid. It made fantastic pressies, especially to my close friends as they know I'm not brill at cooking.

 

I'm intending to make strawberry jam this year if I can find somewhere nearby that has a 'pick your own'.

 

Have fun. Think I'll try the lemon curd too. Any ideas what to serve it with?

....a spoon? :wink: - my preferred method :D

 

The best thing to make if you use the recipe from the forum is the Lemon Curd Roulade - it uses the 4 leftover egg whites....... 8)
