cathybc
a friend had 4 eggs from me. he said two cooked fine but the whites in the other two stayed mushy. Is it my eggs or his cooking ????? Edited August 3, 2008 by Guest
Clur
Depends how he cooked them? If the whites were mushy and he fried them, could be that the eggs were too fresh - he'd be better off leaving them a couple of days. Bound to be his cooking
Hen Watch
I would guess his cooking too. My kids love poached eggs (not the traditional way in water, but in an egg poaching pan). I find my eggs are so large (actually would be classed as extra large if they were supermarket eggs) that they spill over the sides of the egg poaching cup and they take 6-7 mins to cook for solid whites. My kids hate runny whites.

chickencam
One of my girls lays eggs that have quite liquid whites that take more cooking than the others. Her eggs tend to be quite large and almost round so they take longer to boil. Even when fresh they go all over the poaching water too. The consistency must vary from chicken to chicken. The whites on my White Stars eggs too have a different texture to the other eggs.
Mutrix Farmers
If your friend is used to cooking with shop-bought eggs, he would notice a difference - they can be almost 2 weeks old before they hit the shelves. I've given up trying to hard boil any egg less than a week old as I can't get the shell off properly!!
