kannie
Anyone got any suggestions for what I can do with half a packet of ricotta? I made some spinach & ricotta gnocci yesterday (potato-less ones, very nice) and I have no idea what to do with the remaining 200 -250g. Spinach & ricotta pasta would be too similar, I think
Guest
I sometimes chuck any leftover ricotta and parmesan into a cheesy quiche, with onion and bacon - it's delicious!
Richard T
I might be a bit late, but here's something you can do with ricotta: http://diet.ivillage.com/plans/psouthbeach/0,,p7x0-16,00.html It's Mocha Ricotta Creme from the South Beach Diet. It's very good. It's healthy (allegedly). And it's got chocolate. (Must find a recipe for red wine ricotta creme.) Richard T
kannie
Thanks Shona & Richard! Not too late at all - I always have this problem with ricotta! I made a quiche last week, so though that sounds good I think I may just try mixing some cocoa powder into the ricotta and see what happens. Don't have any espresso powder though - maybe grate some chocolate, or some chopped stem ginger might go nicely...
bunee1
OOOOh yum ginger that sounds gooooood
kannie
Finally I mixed the ricotta with cocoa powder, chopped stem ginger + some ginger syrup, some brandy, and a little strong coffee, and then topped it with some curls of chocolate. Not bad: bit like a tiramisu... (but not quite that nice!)
