I know it sounds a very basic thing to ask for, but has anybody got a really nice coleslaw recipe? I have friends over on Sunday and thought I would do roast pork, roast chicken, Greek potato salad, coleslaw and salad. I was thinking about putting some apple in the coleslaw to complement the pork....

I love red cabbage with pork and think it would be very nice with apple as well.

The Jamie Oliver one, out of the 'Cook with Jamie' book is delicious.

 

 

Half white cabbage

Small red onion

3 carrots

2 red apples

small bunch flat leaf parsley

juice of 1-2 lemons

couple dollops good mayonaise

1 heaped teaspoon english mustard

sea salt and freshley ground pepper

 

Basically, slice the cabbage and onion and julienne the carrots and apples.

Put in a bowl with chopped parsley, lemon juice, mayo and mustard. Season to taste.

I leave the cabbage, onion, apple and carrot to soak in the lemon juice for a while and then you don't need to add so much mayonnaise and it is very refreshing and not so 'creamy' - depends on how you like it really.
