How long do eggs keep for?

Second egg today, and in the nest box, all proper, to boot. Not like the first one, which was laid outside, probably in surprise. So: WOOH! Go my hens! I'm so proud of your tiny eggs!

 

That out of the way, does anyone know how long eggs keep for? I'm starting in on my Christmas hampers, and was theme-ing them round breakfast this year, and was doing the maths to work out if I'd have enough eggs to go in mini egg baskets, and then realised I had no idea as to how long eggs keep for.

 

I have a theory that all consumables bought from a shop last two weeks maximum and all homemade stuff lasts eighteen months minimum. But as I'm clearly making this up, does anyone know how long an egg lasts in reality?!

I keep them for a fortnight - any longer and I check with the float-or-sink test. If an egg is fresh it sinks. If it floats it is off. The Free Range egg woman at our farmers' market says 3 weeks is about it.

 

Actually, if it is over a week old i use it in cakes and stuff - I've go so used to lovely fresh eggs for poaching that anything that has been around more than 7 days is regarded as "an old egg." :lol: Chooks do spoil us!
