Snowy Posted September 19, 2008 Share Posted September 19, 2008 Haven't made this for ages, but did it today as I had some cream needed using up. It is sooooooooo delicious! Takes 10 minutes to throw together, then sets in the fridge (no eggs though, sorry!). 250g digestive biscuits, crushed 110g butter zest and juice of 2 lemons 1 large tin condensed milk 1/4 pint cream, whipped 1/2 chocolate flake to decorate 1. Melt butter - combine with crushed digestives. Line an 8" flan ring (I used a loose bottomed cake tin) with the mixture and refridgerate. 2. In a bowl mix together the lemon juice, zest and condensed milk. The mixture will start to thicken. Mix in the whipped cream and spreadon top of the biscuit base. Refridgerate to set then decorate with crumbled flake (or whatever you have to hand, ie blueberries and extra whipped cream ) Can be frozen.
