Chooks Aloud Posted October 17, 2008 Share Posted October 17, 2008 I just put the pasta on to boil and whilst this is boiling gently fry some onions, peppers. When they are soft put in half a tin of evaporated milk with some marjoram or whatever herb I have to hand and think will go. I then top up with semi-skimmed milk (sorry no quantities, I just chuck it in. After this I put in the tins of tuna (normally 2) and season with plenty of black pepper. Mix well, when heated and the pasta cooked, drain pasta and add to tuna mix. Mix together, adding more milk if too dry (I just do it by eye). Put into an ovenproof dish and bung in oven to bake - not for too long as it is already cooked. Then take out and add plenty of grated cheese over the top. Put back in oven to melt and go brown. Delicious - my kids love it. With the other half of the tin of evaporated milk I make chocolate balls for pudding. I made this recipe up myself to use the milk up, so again there is no quantity, I just know when it looks right. These are really delicious and healty too. Put a small amount of butter in saucepan (approx 1 oz) then add brown sugar, one tablespoon syrup, 2 heaped tablespoons cocoa powder. Put on gentle heat and melt. Once melted stir to make sure no lumps. Add evap milk and increase heat. It will bubble you will know its ready for the next stage when, drawing the spoon through the mixture it leaves a path. Don't over cook this. Once you have got to this stage take off heat and add approx 6-8 oz porridge oats and 1oz raisins. Combine the mixture. The mixture should be just sticky enough to come together, if it isn't add more milk. Put some icing sugar into a dish and taking a small amount of the chocolate mixture, make a ball and roll in the icing sugar. I do this with 2 spoons to save hands getting messy. Put into fridge. Great for lunch boxes as well, it was always a talking point amongst the other kids at school. As I said before, you will have to play around with the quantities to get the mix right. Rolo Rabbit Posted October 17, 2008 Share Posted October 17, 2008 Our usual pasta bake is so simple it's ridiculous but we all love it. I just boil the pasta and meanwhile heat a jar of pasta sauce. When the pasta is cooked, stir in the tom sauce and a tin of tuna. Tip it into a baking dish and cover with plenty of grated cheese. Bake at gas 4 ish until the cheese is nice and bubbly.
