kannie
Anyone got any suggestions for using them up? I have 4 (following some lemon curd making), and don't really want to throw them away... Don't really fancy meringues though....

Lesley
I had everything ready last evening to make toad-in-the-hole, mashed potato and veggies. Impending rain meant that I had to go and help feed all the animals and we're fed up with eating really late so........ I dried off the potatoes and threw them in a large roasting tin in a very hot oven. While they started, I cut the carrots into med. sized chunks and then threw them and the sausages in as well. A couple of minutes after that I added chunks of courgette and a few broad beans - then I covered everything with the batter. 30 minutes later - and all the animals fed and watered - all we had to make was some gravy The potatoes had roasted and were peeping out of the batter - they weren't big chunks as i had cut them ready for mash.
