chickencam Posted November 20, 2008 Share Posted November 20, 2008 We bought a Kenwood Major a couple of weeks ago mainly for mixing up bread dough. Upto now I have been using the same recipe as I use in my Breadmaker, but it seems to mix it up a bit lumpily rather than a nice smooth dough, so I have been giving it a quick knead by hand before proving. I made some cracking bread yesterday by using the normal oven setting on my oven instead of the fan which i think cools the oven too much. It has been a long time since I made bread using the Kenwood, but I used to use the quantities in the recipe on the back of the fast yeast packet and tweak them to suit. missuscluck Posted November 21, 2008 Share Posted November 21, 2008 I have an c.1970 Kenwood chef and in the book that goes with it it says.... White bread 3lb strong plain flour 3 level tsp salt 1oz fresh yeast or 1/2 oz dried yeast 1 tsp sugar 1 1/2 pts warm water 1 oz lard. A bit dated with the lard I think!! miffy Posted November 22, 2008 Share Posted November 22, 2008 I make bead using the Kenwood chef. I make 2 small loaves. Here is my recipe 2lb Doves bread flour 1tsp salt 2tsp sugar 2tsp Doves dried yeast I put these all in the bowl and add 1pint tepid water for white flour or 14 fl oz for wholemeal flour. I mix on minimum speed for 2 mins, adding just under 1tbs of sunflower oil. Then on speed 1 for 6 mins. Then prove till doubled in size, approx 60mins. Knock the dough back in kenwood, min speed 2 mins. Then kneed by hand briefly and shape as required. Prove 2nd time till doulble again. Cook. Hope that helps.
