Cinnamon Posted December 9, 2008 Share Posted December 9, 2008 I had a bit of a flash of inspiration last night, which doesn't happen often,but has resulted in some mince pies which are so simple they almost make themselves Get a sheet of that chilled ready rolled puff pastry,& once it has reached room temperature (it will crack otherwise) open it out flat onto a work top which has been disted with sugar & cinnamon. Egg wash one long side, the one neares you is easiest. Spread a jar of mincemat over the rest,leaving a 1cm edge to the short sides. I used my home made mincemeat,but any good quality stiff will do. The roll it up, starting with the un egg washed side,like a swiss roll - its really easy to do. Then slice the roll into little discs.I made mine about 1cm wide. Sit them on a greased tray,not on their sides,but as if they are still on the big roll, & egg wash the pasry top. bake at about 180 (fan) for anout 13mins. They are really delicious, & would make nice party nibble too, as you can make then smaller if you like Quote Link to comment Share on other sites More sharing options...

I cooked them like biscuits with the discs flat on the baking sheet and then drizzled glace icing over and sprinkled flaked almonds on top when they were cooked and cool. They were really tasty.
