Any Freezable or Slow Cooker Chicken dishes?

Not really a recipe, but I threw some f-r chicken thighs & drumsticks into the slow cooker (having browned them off in the frying pan) & added onions, fresh tomatoes, a bit of chopped carrot and peppers which were all sitting in the fridge, a stock cube and a glass of red wine, meant to add some mushrooms, but forgot them! Turned on the slowcooker & left it all day, served with a plate of couscous as we were all late home & it was yummy!

 

Was going to put the excess in the freezer for another day, but had it the next day instead without the aid of the freezer!

 

I don't really se recipes with the SC, just chuck whatever I have to hand in & usually it comes out ok - if not fantastic, especially if it gets reheated the next day in the slowcooker (usually a beef concoction for that)

I love this one - its a bit different from your usual chicken casseroles....

It freezes really well - this will serve 4.

Don't be put off by the anchovies if they are not your thing, they really do add a certain something!

 

Rosemary Chicken & Tomato sauce

 

Heat half tbsp olive oil in a pan& brown 8 boneless skinless chicken thighs thoroughly.

Add a sprig of rosemary,chopped ,stir to coat then set aside.

 

In the same pan heat another half tbsp of oil & cook 1 chopped red onion for 5 mins. Add 3 sliced garlic cloves & 2 chopped anchovy fillets & a bit more chopped Rosemary & fry until fragrant.

 

Pour in a 400g can of chopped toms, 1 tbsp capers & 75ml red wine, bring to the boil & return the chicken to the pan.

Cover & cook for 20 mins, or until the chicken is cooked through.

 

Season & serve with mash ,salad & red wine :P

I'm another who tends not to follow specific recipes if I can get away with it! :lol: Tried chicken in the slow cooker today for the first time - fried onions & garlic and added to pot with chopped courgettes and a tin of chopped tomatoes. Browned 4 chicken legs and chucked them on top of the veg, seasoned and left on high for the day. Gorgeous! Much more successful than the beef! When I lifted the legs out, the meat literally fell off the bones! :lol: Had to spoon a bit of fat off the top though - you definitely don't need any extra liquid with it either! :shock::D
