chickencam Posted February 12, 2009 Share Posted February 12, 2009 Years ago we used to buy these from a local butcher, who then went out of business, we now have a Kenwood chef and a mincer and sausage maker attachment and would love to have a go at making our own. Milly Posted February 13, 2009 Share Posted February 13, 2009 Not a recipe but - Sainsbury's sell them so I looked on their website to see what's in them: Pork (83%), Fresh Fennel (9%), Italian Red Wine (2%), Fresh Basil, Olive Oil, Salt, Potato Starch, Fresh Sage, Black Pepper, Fresh Marjoram, Fresh Garlic, Fennel, Preservative: Sodium Metabisulphite, Antioxidant: Ascorbic Acid, Filled into Natural Pork Casings. Not sure you would be using all those preservatives though! We had some a few months ago, but I was a bit disappointed - they were like ordinary sausages with fennel, rather than real Italian ones which always seem to be a bit chewier and drier (and meatier). chickencam Posted February 16, 2009 Author Share Posted February 16, 2009 All that I found when I googled was italian recipes with sausages in them and a couple of American ones which I found hard to translate.
