I think I bought it as was going to make some pasta and roasted veg but havent and now fancy something else. So any baked aubergine recipes or other ideas? moochoo Posted March 23, 2009 Share Posted March 23, 2009 I do a simple gratin with aubergine. Just slice the aubergine thinly and layer in an ovenproof dish. Pour over a tin of chopped tomatoes and add some herbs and chopped garlic. Give it a shake so the tomatoes get in between the layers and put in the oven, gas mark 7 for 30-40 mins. Rhapsody Posted March 23, 2009 Share Posted March 23, 2009 I love Melzanes Parmigiana and make it alot, but for a speedy dish have you tried Beignets? You slice the beast very thinly through the middle dust with flour then dip in batter mix. Fry in very hot oil like chips for a couple of minutes and eat straight away with a sprinkling of sea salt. You could use Patak's ready made curry paste - chop an onion and the aubergine, saute in hot oil with the curry paste, add a tin of chick peas, a tin of chopped tomatoes, stir well and let simmer until tender. Looney Posted March 23, 2009 Share Posted March 23, 2009 I made moussaka yesterday - ok not quick and easy but I also made baked aubergine with cheese. Similar to a recipe already mentioned, layer aubergine with home made tomato sauce and mozzarella and parmesan and chuck in the oven until it looks cooked! Lovely!
