Phase 2 due at 7.30 ish. **Update** It worked quite well, but if I'm honest, it is a tiny bit chewy. I used bread flour, and I think I probably put too much water in, as it looked too dry on the initial mix. I am having another bash. I have set some more dough to rise, this time with plain flour and less water., and I'm going to leave it for 18 hours. Watch this space.
