Ok, here goes the Butterscotch Cheesecake recipe: Butterscotch sauce 50g butter 50g soft brown sugar 50g golden syrup Melt together over a low heat Add 2 tablespoons double cream, stir in and allow to cool completely. Cheesecake Base 200g digestives crushed 100g butter melted Add together put in a dish, put in fridge to chill whilst making topping Topping 300mls double cream (recently I've been using a whole elmlea double light to be healthier!) 100g icing sugar Whisk together until very thick Add a 250g tub of soft cream cheese Whisk in, along with a 2 tablespoons of the sauce Put over the base and chill for a couple of hours.
