Ideas for cherries please......

I am inundated with cherries this year and apart from making (hopefully) several more bottles of cherry brandy for Christmas, which was went down very well last year, I haven't got a clue what to do with them!

I thought about a jam that I can also use it as a sauce with duck, so anyone got a recipe or any other ideas gratefully received :!:

I'm using the same recipe as Sloe Gin Jackie. I'm stoning the cherries but adding the stones as well for more flavour. That way, it will be easier to use the boozy cherries when I strain it!

 

I made Spiced Macerated Cherries yesterday - stoned cherries brought just to the boil in a syrup made with granulated sugar, water and cinnamon/nutmeg/cloves. I then used some of the cherries with other summer berries to make a Summer Berries Sabayon - great because it uses lots of egg yolks and I can make meringue for pavlova today.

Hi Jackie,

 

The muffin recipe is really easy...

 

Cherry Muffins

 

9oz plain flour

3 tsp baking powder

3 oz granulated sugar

4 oz stoned cherries

1 egg

8 fl oz milk

3 fl oz sunflower oil

A little almond essence if you want to

 

Beat egg and add to milk and sunflower oil in a jug. Set aside.

Sift flour, baking powder and sugar into a bowl. Add the stoned cherries.

Stir in the egg/milk/oil mixture (with essence if used) and mix lightly until the liquid is incorporated. The mixture will be lumpy but don't overmix as this will make your muffins heavy and flat!

Spoon mixture into a muffin pan lined with 12 muffin cases and bake for 25 minutes at 200C until golden and well risen.

Cool on a cake rack and enjoy!

The muffins freeze really well too.

Excellent, Jackie :D !! I hope you enjoy them :D . LSH takes them to work for his elevensies and doesn't like anything sickly sweet but finds the muffins are just right with a cuppa :D . I use the silicone muffin cases too as there's nothing to throw away and the muffins slip out of them so nicely.
