Birthday weekend- freezer recipes needed

We have a family get together next weekend . 13 plus our 6!. I want to cook some things in advance and freeze them. I have done several sponges but not alot else.

Can you freeze quiches? there are some vegetarians coming so recipes please!. Can you freeze a prepared but not cooked pizza? also does anyone have a vegetarian lasagne recipe that freezes? they are all staying for two to three nights. we are hoping to do a barbeque one night and probably lasagnes another.So any ideas recipes are gratefully received :)

Yes, you can freeze uncooked pizzas - use large rectangular baking sheets as the shape is a better fit in the freezer and easier to cut when cooked.

 

Make lasagne in roasting tins - same reasons. Garlic Mushroom is my favourite veggie lasagne. Cook sliced mushrooms doen until soft and slightly golden around the edges, move to edge of pan and add some garlic in the middle. Cook gently and then mix, add a tin or two of tomatoes and cook some of the liquid off. Use instead of the meat sauce element.

 

Get together all condiments and salad dressings so that you don't have to hunt for them in a hurry.

We have just had mrclucks 50th birthday party. We just had close family and some of his closest friends round but this amounted to about 50 mouths to feed including the kids.

 

I made Pizza bases and froze them then defrosted and topped them on the day. Same method with the quiche, just froze the pastry cases but they can be cooked compleatly with the filling and frozen.

 

I made scones, cakes, fairy cakes and cranberry and white choc cookies and froze the lot.

 

Also made mini open topped pork pies in my fairy cake tins and froze these as a whole then just defrost and eat.

 

Also did a batch or two of small granary rolls made with dough made in the bread maker and froze them to eat with cheese.

 

I have frozen Lasagne cooked in trays before. Think it drys out a bit though when you re cook it again. You can make up lasagne the day before and fridge it then cook it. That way its only cooked once.

Hi Lesley

Doe your vegetarian lasagne freeze?

Also do you freeze your uncooked or cooked lasagne? There seems to be some discrepancy amongst websites which is best

and how long you leave out to defrost before cooking?

 

I've never frozen it - like Lynda says, it may be best to assemble it the day before and keep it chilled - thereby cooking it just once.
