LaPoule Posted September 10, 2009 Share Posted September 10, 2009 (edited) I have a fabulous recipe for pepperkaker than my aunt uses. Every year I used to lose it, and then have to call my mum. And once she had dug it out and had given me the details, I found the original. EVERY YEAR! ...hunts around... I've just found it (on the back of an envelope... ) 250 gr syrup 150 gr sugar 1 tsp ground ginger 3 tsp ground cinnamon 1/2 tsp nellik (don't know what this is in English....anyone? CLOVES! Love google ) 1 tsp ground cardamon 150 gr butter 1 egg 2 tsp bicarb 5-600 gr plain flour Melt the syrup, sugar and spices in a saucepan Add the bicarb Whip until frothy Put butter in a large bowl, and pour sugar mix over, and mix until melted Add the egg Add flour little by little Dough should rest in fridge (it says a couple of days, but I'm sure a few hours would be enough!) Roll out and cut shapes Cook on 175C (fan) for 10 minutes And if you make some, feel for me... it doesn't work with gluten free flour. ..lay a little egg for me Posted September 10, 2009 Share Posted September 10, 2009 I've seen other recipes that say to rest it overnight in the fridge...I guess it develops the flavour somehow. And its probably why I've never managed to make any as I'm more of a "I'm peckish what shall I cook?" kind of person than "I will fancy some pepparkakor tomorrow afternoon" kind of person! I used to make these with holes in, and then hang them round the house on red ribbons at Christmas time. However, don't do it too far in advance, because after awhile, they get soggy and start dropping off!
