Lesley Posted December 7, 2006 Share Posted December 7, 2006 (edited) Digestive Biscuits 8 oz/200g Wholemeal flour 2oz/50g soft brown sugar 5oz/125g butter 1 tsp baking powder 1/2 tsp salt 1 tablespoon milk Pre heat oven to 180C/350F/Mk4 and lightly grease a baking sheet. Mix all dry ingredients and then rub in butter until mixture resembles breadcrumbs. Add enough milk to make a moist pastry consistency. Refrigerate for 15 mins. This dough is fairly delicate so roll out between sheets of baking parchment or cling film until 3mm thick. Cut into discs - reroll any trimmings. Mark with a fork (or a meat tenderiser - which is what I use) Bake for 15-20 mins until lightly browned and firm to the touch. Remove from the oven and leave for 5 minutes before transferring to a wire rack. Store in an airtight container. You could cover them with melted chocolate..............
