Top up with Brandy - replace lid Store in a cool place for at least a week. Stir occasionally. Then...... Drain cherries over a small bowl (use the liquid to make the Choc. Truffle recipe) Dip the drained cherries in melted, good quality chocolate and place on baking parchment to harden. Place in paper sweet cases. (If the cherries aren't drained well, the liquid will weep through the chocolate). You can also cut the cherries in half, add a small piece of marzipan (or a piece of the truffle mixture) roll into a round and cover either with truffle mix or melted chocolate.
