Butternut squash lasagne

Had a butternut in the fridge and have a huge humungus one from a friend ripening on the window ledge - decided I wanted to try a lasagne with it -= lovely - large pan, olive oil, onion and garlic(garlic squashed with salt) and when softened added freshly ground cumin seeds - half teasp, some paprika and some chilli powder and left to cook away - added a yellow pepper and my butternut squash diced with a heap of tomatoes all chopped up and left to cook - made my mornay sauce and layered with lasagne verdi when squash cooked - absolutely wonderful = a bit of a kick from the spices and very filling with broccoli for dinner tonight. yum and more left over for tomorrow or to freeze - very economy gastronomy in using up what I had left - hubby was not so impressed but he got the left over mince from last nights spag bol and had it with boiled potatoes and brocolli :D
