bluekarin
can you eat beetroot leaves? I had a nice bunch of beets in my veg box yesterday and was wondering if you can eat them otherwise the chickens will have them as they them. ..lay a little egg for me
I think I saw one of the chefs on Masterchef using beetroot tops in a salad, so I say YES!
bluekarin
Thats lucky then as I have made a 'oops too much veg left from last weeks delivery and then had this weeks turn up' soup which consists of celery, leeks, carrots, onion, potato, swede, sweetcorn with some veg stock, bayleaf, thyme and marjoram. Season. Added beetroot stalks, cooked for about 30 mins, then added shredded tops, cook a bit more then serve with a bit of crumbled up Shropshire Blue. Yum

Peter S
You can most certainly eat beetroot leaves - young, tender leaves can be eaten raw as a salad, and older, tougher leaves wilt down excellently if treated like spinach. I tend to destalk the leaves first - chop the stalks and saute in butter for a few minutes, then add the ripped leaves with a little water (the water clinging to the leaves after rinsing is fine), a little salt and pepper, and perhaps a grating of nutmeg. Wilt down, and then squeeze out excess liquid. Finish with butter. Serve with, for instance, a nice piece of fried halibut and some fondant potatoes. Sorry - got carried away, there! Valkyrie
Don't deep fry them though - bleh. Tried to do Chinese version of "seaweed" - best stick to cabbage for that! Otherwise they are OK (that's the only part I do eat - OH has the root).
