Freezer meal suggestions please

I'm making a batch of meals for my OH elderly aunt and uncle and am hoping for some suggestions of new meal options.

 

Needs to be low in tomatoes or tomato free.

 

I have lots of pyrex containers that are freezer to oven.

 

The obvious options are cottage/shepherds pie, stew. I also freeze a cheesy pasta with leek and ham bake.

 

Has anyone got any other good ideas for freezer to oven ?

When we were having the kitchen done I made up lots of batches of fish pie, minus eggs, which worked well. Also moussaka with a pesto sauce rather than tomatoes, coq au vin and beef bourgignon (sp?).

I agree, I make up meals for my Grandfather as he isn't able to do it himself anymore. I make in batches and then freeze in foil containers that he can put straight into the oven.

 

His favourites are:

 

*Fish Pie (again without eggs)

*Smoked haddock in Cheese Sauce

*Cod in Parsley Sauce

*Salmon in Tarragon Sauce

*Beef and Ale Casserole

*Cottage Pies

*Sausage and Leek Casserole

*Sausage and Bean Casserole

*Lamb and Barley Casserole

*Chicken and Bacon Supreme

*Chicken Chasseur

*Chicken and Mushroom in red wine sauce

*Bolognese - which he likes served with potato and not pasta :roll:

 

Sometimes I make some pies aswell, such as Steak and Kidney, chicken and veg etc I make them in the foil containers and put uncooked pastry on the top and glaze with milk, then freeze, the pastry cooks when he cooks it.

I may be too late to offer a suggestion but what about fishcakes? I made about 30 today and since there are just 3 of us I will freeze most of them. A good idea is once you've made them into fishcake shapes line a tray with cling film and place them on there (I had to use 3 trays!) and put them in the fridge for at least two hours. You can then take the ones you want to freeze and put them into a container/s as they'll be stiff and easier to handle. They can be either thawed and then fried until warmed through or you can lightly fry both sides from frozen and then place in the oven until cooked all of the way through. I make a caramalised cabbage, apple and onion dish to go with it - again loads of it so that I can freeze it.
