Umami - the 5th taste

Don't forget what the article says fairly far down the list. The whole goal is to stimulate the receptors on the tongue that detect glutamates.

 

In other words, instead of loading your food with MSG, you're now able to buy a paste that's loaded with naturally occurring glutamates to achieve much the same thing. Just because these particular glutamates are naturally occurring doesn't magically make them more healthy - after all, salt is naturally occurring, but if you conentrate it into crystals and then load up your food with it, you'll be talking long and hard with your doctor before too long.

 

It's often forgotten that "tasty" and "delicious" are not absolutes, and everyone's palate can be re-educated. Given all the packaged foods these days, the tastes generally perceived as normal these days are surprisingly different from natural flavours. Therefore, rather than trying to find a magic ingredient, perhaps we should try realigning our taste buds so our perceptions of delicious are triggered by natural flavours in balanced proportions.

 

You might have guessed, by the way, that I won't be buying any Umami paste :wink:
