Couperwife Posted February 17, 2010 Share Posted February 17, 2010 got a recipe for Glamorgan sausage in our sausage book (Paul Peacocks book) never tried it, but you are more than welcome to the recipe Glamorgam Sausage This version is a vegetarian sausage that is not stuffed, but rolled in breadcrumbs and bound with an egg. it makes a great sausage fest when served with other sausages. Ingredients 450g Caerphilly cheese 300g white breadcrumbs 2 eggs Seasoning 50g finely chopped Leeks 15g finely chopped chives thoroughly mix all ingredients, but only one egg. beat other egg in a bowl roll sausage sized portions, dip in egg, then roll in spare breadcrumbs sausages can be fried for 10 mins until the breadcrumbs and egg are cooked you can use almost any crumbly white cheese, but avoid cheddar or other oily ones which will separate during cooking Tip: some recipes call for spring onions instead of Leek. majorbloodnock Posted February 17, 2010 Share Posted February 17, 2010 Mine uses a slightly longer list. 5oz fresh breadcrumbs 5oz grated Caerphilly 1 small leek very finely chopped 1 tbsp chopped fresh parsley quarter tsp chopped fresh thyme 2 eggs 1 1/2 tsp English mustard powder 3 tbsp milk plain flour for coating 1 tbsp oil 1 tbsp melted butter s 'n' p Mix breadcrumbs, cheese, leek, herbs and seasoning. Whisk the eggs with the mustard and reserve about 2tbsp. Stir remaining egg mixture into the cheese mixture, adding enough milk to bind. Turn out the mixture onto a lightly floured surface and divide into eight equal pieces. Play plasticine until you've got eight sausage shapes. Dip the sausages into the reserved egg mixture to coat. Season the flour with s 'n' p then roll the sausages into the flour to coat. Chill for about 30 mins. Oh, and you might as well put the sausages in the fridge for that time too Preheat the grill and oil the grill rack. Mix the oil and melted butter, then brush over the sausages.
