Jam recipe please

Does anyone have a foolproof recipe for rhubarb and ginger jam please? we love it but its crazy to keep buying it when I have rhubarb in the garden!!! none of my books have it in and i'm a bit wary of trying any old recipe off the internet. Thanks

Ive used this one before and it was nice - i dont think it was overly "gingery" so if you like it with a bit of a kick you could add more ginger to it.

 

Rhubarb and ginger jam

cooking time 25 mins

 

1 lb rhubarb, chopped

1 teaspoon powdered ginger or 1-2 oz crystallised ginger

1 lb sugar

juice of 1 lemon

 

simmer rhubarb with no water until soft, if the rhubarb is very hard you may need 1 tablespoon of water

sprinkle over the ginger (if using the powdered ginger)

stir in the sugar and lemon juice, stir until sugar is dissolved

boil rapidly until set

 

you can change this to a rhubarb preserve - sprinkle the sugar over the chopped rhubarb, leave for several hours and then cook and stir until the sugar has dissolved, add lemon juice and boil until syrup is thick.

 

enjoy (ill eagerly await my jar :lol::lol: )

 

this book was my mums, so its about 35 years old - which is why its in lbs and ozs :lol::lol:

lbs and oz is my lingo!!!! my old balance scales only have imperial weights, some how I never got around to buying metric weights

I'll let you know how I get on......wont be till next week end I expect

I would love to send you a jar...if its edible....the last time I made jam was a disaster

finally made this today, used ginger root and crystalised ginger as on the foody web site as we like plenty of ginger.....tastes fab and looks great, quite pink.

first time I have made jam on the aga, wont be worried to try again........shame the birds are getting all the blackcurrants :roll:
