Mrs Webmuppet Posted December 10, 2010 Share Posted December 10, 2010 One of my friends has dropped not so subtle hints in my direction that she would like some fig jam for her hubby for Christmas. Now does anyone have a reliable recipe? I've had a look on the internet and found several recipes but they all use vast amounts of fresh figs..........and fresh figs are really quite expensive. It was an American recipe, so I had to adapt it slightly ( tart apples= cooking apples, sugar= half ordinary sugar, half jam sugar etc ) just to make sure it set as figs have next to no pectin.Fortunately I have a american style cup measuring thingy. So made her some for Christmas. Its fig, raspeberry, orange and ginger. Lovely and thankfully managed to get figs at the market so they were cheaper. Mrs Webmuppet Posted December 14, 2010 Author Share Posted December 14, 2010 here's the recipe..........the recipe is off an American site so the cups relate to the american cup measurement, Ingredients: 1 lb dried fig, stems removed 2 tart apples, peeled and cored ( I used 2 cooking apples) 1 orange, juice and rind of 1 lemon, juice and rind of 4 cups water 3 cups sugar ( I used half jam sugar and half granulated sugar) Directions: Prep Time: 15 mins Total Time: 45 mins 1 Put figs, apples, orange and lemon rinds through food processor or chop fine with knife. 2 Place in heavy kettle. 3 Add water. 4 Boil for 10 minutes, reduce to simmer and cook 10 minutes more. 5 Add sugar and salt. 6 Mix well with spoon and simmer for an additional 20 minutes, stirring often. 7 Add fruit juice; mix well. 8 Pour into hot sterilized jars. 9 Seal and keep in a cool place. I gave it a good boil to get it to anywhere a setting point, it is a loose set jam. My friends hubby tested it today and said it is fantastic.
