It is one of their current recipe cards and uses Boursin cheese as the creamy element in the sauce. We used asparagus, baby leeks, orange pepper & mushrooms instead of the courgettes and dill suggested in the recipe, but will be making it again when the dreaded courgette glut comes. I like the idea of thinking ahead for the courgette glut. chickencam Posted May 3, 2011 Author Share Posted May 3, 2011 Yes that's the one, thanks for the link, I am hopeless at that sort of thing We used full fat Boursin, which is on offer in our local co-op on BOGOF at the moment. I will definately be making this again it was lovely and will be a great way to use courgettes, I have one plant romping away that I took a risk and planted in one of my raised beds a couple of weeks ago, and some seeds planted. I bought a super book on Amazon last year called 'What will I do with all those Courgettes', which I feel will come in handy this summer! LolaLayla Posted May 3, 2011 Share Posted May 3, 2011 That looks really nice. I must remember about it. I have 1 courgette planted out and 3 still in the greenhouse waiting. I am a bit worried to put them out too early as I lost the ones I planted outside last year with frost. I think it is supposed to be quite cold here up north tonight.
