You have inspired me Snoxy, I have a lovely cupcake book and have tried some of the recipes, still need to perfect the butter cream icing - mine never seems solid enough for want of a better word! Snoxy
Thank you Egluntine for sorting the pics for me you are an Oh they look like heaven on a plate ! You have inspired me Snoxy, I have a lovely cupcake book and have tried some of the recipes, still need to perfect the butter cream icing - mine never seems solid enough for want of a better word! It was a little book I bought in the Works that inspired me They do look very good! Well done! Please can you tell me how you make the topping. Is it butter and icing sugar? or something else? and if so what quantities? For 12 cakes I start off with 4oz Lurpak Light...only because I like the taste or Anchor spreadable is good too...I don't use marg. Lurpak and Anchor are both easy to beat and contain a higher quantity of butter Block butter is very hard to beat by hand but you could use it and beat it with an electric mixer I then add a good teaspoon of vanilla extract and one teaspoon milk...followed by icing sugar...I add it little by little until I like the consistency...I would say it is approx double quantity icing sugar to butter stuff...but I will do it more accurately next time I make it and let you know...will be making them in the next few days I use a 12" piping bag and a Wilton No. 1 nozzle...it is fab Just to add I use gel colours...I tried using liquid colours and found them a nightmare...everytime you add more the consistency gets runnier and runnier...gel colours dont change the consistency and you can add a tiny amount to adjust the colour of the buttercream using a cocktail stick I order my colours, cup cake cases, cutters etc. from here... www.cakescookiesandcraftsshop.co.uk P.S just had another look - where did you get the daisies etc ? I bought a Daisy cutter and made them...watered down some Tangerine coloured gel colour and painted it on...then added glitter. They were my practice cakes for my nieces 6th Birthday...her name is Daisy The butterflies and hearts are made using cutters too. The milk and white chocolate hearts are Dr Oetker (spelling!!)
