healthy packup help

I’m running out of inspiration for packy-up. Usual is omelet and salad. A small piece of tuna & salad. Cold chicken salad. By the time Friday is looming I hate the sight of tom/cuc/radish/cellary/pepper

Bread is a no no

 

Help me please before I go to canteen and pig out.

My OH does that every now and again - there are some ryvitas that don't contain wheat and also some rice cakes. They look pretty gruesome to me but he says they're quite tasty really. If you're sick of everything else, it might ring a refreshing change?

My lunch is often based on last night's dinner! What about rice, rice pasta, quinoa, or similar - I try and jazz things up with pesto, capers, sun-dried tomato, a handful of toasted sunflower seeds or pine-nuts makes it more interesting as well. If you add frozen peas or sweetcorn they are defrosted and perfectly edible by lunchtime (can you tell I'm usually in a hurry!). I add a bit of pepper, cucumber and tomato but I can't eat huge amounts of salad, so I often add cooked broccoli, cooked or raw carrot, or anything else I have left over.

Why not invest in a wide-mouthed vacuum flask and take some hot meals. Obvious choices would be soups and stews, but with enough room to get a dessert spoon in there's no reason why not to take more adventurous stuff. Risotto? Something Oriental with stir-fried noodles (one of the gluten-free varieties in your case, of course)? No reason why not to pop in a few slices of a roast with some spuds and veg.

 

Probably won't look as pretty when lunchtime comes, but it'll taste just as good.
