craftyhunnypie Posted July 2, 2007 Share Posted July 2, 2007 In a bowl break up 2 slices of bread into beadcrumbs. Add a tablespoon of dried sage and an ounce of chopped hazlenuts (mixed nuts if you prefer). Mix all together. Put to one side Take 6 spring onions, chop them & fry them until soft ( not brown). Now add the breadcrumb/sage/nuts mixture to the frying pan, mix gently and fry for about 1 - 2 minutes on low heat. Pour the mixture into the bowl again & allow to cool slightly. Beat an egg and add to the breadcrumb mixture, stir and bind together to make your stuffing. Take 2 bacon chops ( not rashers or gammon, but chops) and divide the stuffing equally between the 2 chops, piling it on top of them and squashing down with a spoon. Now take some rashers of bacon and wrap around each chop, over the stuffing and make sure that the rashers join on the undersides of the chops. Each chop usually takes 3 rashers to cover. Place them on a baking tray and cook on 180 degrees C for 30 - 45 minutes. Meanwhile in a saucepan put 3 tablespoons of plum jam, the juice of 1 lemon and a little boiling water & cook gently until all melted together and a runny sauce is acheived. Mine are done and ready to cook later on when hubby gets in. He adores this meal, it's the way to his heart! He's got trifle for afters too. I was supposed to be starting my diet today too! No chance eh? I've also got a recipe for chicken in apricot jam sauce with ginger & sherry. Now that is good too. We call it bezza chicken after the woman who gave me the recipe! he he N~ot had bezza chicken for ages, so can't quite remember exactly what goes in it. I'll try & found out.
