Lesley
Nom nom - what is canola oil? It's rapeseed oil over here - canola in the US.
Alis girls
Thanks Lesley - heard of rapeseed oil but not canola. I will look at doing these as have a glut of courgettes.
redhotchick
I made these and took them into work. They went down very well My tin was 11"x7" so I converted to metric and recalculated the ingredients It worked out as 230g sugar, (I actually used 115g plus 2tbsp splenda - they were probably a bit less sweet than the original recipe, I found this to my taste!) 125ml rapeseed oil (sold in my local supermarket as vegetable oil - check the ingredients) < 2tsp vanilla extract 160g Plain Flour 22g Cocoa powder <1tsp salt <1tsp baking powder 384ml Shredded Courgette (mine was finely shredded) I chopped "some" chocolate and "some" pecans, sorry I can't remember how much!
