New hens not going into Eglu Go Up

Hi,

 

I wondered what people prefer for pancakes, fresh laid today eggs, or slightly older ones? I know I prefer a day or two old for frying, as fresh out the box seem to be too runny.

 

Does it matter for pancakes?

Personally, I've never had an issue with the eggs being whatever age, so I'd go for the oldest you've got.

I tend to use older eggs for baking- and fresher eggs for poached eggs as they seem to hold together better when fresh.

I know for a sponge the freasher the better

I'm useing a couple from yesterday for pancakes because I damage to in my pocket as I closed one of the nest box doors last night and sod's law the ones was a realy nice clean and shiney one that would have look fanastic in my egg display on Sunday

DD has crepe/pancakes every morning and OH has poached eggs we try frantically to keep up to date with eggs so ours are at the oldest 3 days old ,so can only compare just laid to that but notice no difference.

I always use the oldest eggs and have no problems with the pancakes.

The only thing I ever have problems with is hard boiled eggs which don't peel too well if they are fresh!
