bluekarin Posted May 4, 2013 Share Posted May 4, 2013 I have a 2.6 kg joint of topside which I'd like to BBQ. Having never done this before, I was after some hints or tips, or even don't do it! patsylabrador Posted May 6, 2013 Share Posted May 6, 2013 I've never tried this but if I did I think I would coat it in a flour/mustard/lard paste and seal that first in a pan. I'm sure I saw that on a history programme about spit roasting so I guess it would work for a bbq. The 'pastry' keeps it moist and stops it charring round the edges too much.
