Homemade penne

I have been making my own pasta for several years..... Tagliatelle, spaghetti, lasagne sheets..... But until recently I haven't made shapes.

 

However, a few weeks ago I decided to make penne..... Basically you roll the pasta as thin as you can, then cut it into squares about 2 inches in diameter. You start at one corner and roll around something small and round (I have a bamboo knitting needle that I use for culinary purposes) as you get to the opposite corner, you dab with water and stick it then roll it off the knitting needle and place on a tray to dry a little.

 

It is quite time consuming, however, it is definitely worth it.

 

I have started making pasta bakes again using the penne.... I have made ones with chorizo, tomato and white wine sauce and peppers.... And the other one has been bacon in a white wine and cream sauce with veg.

 

Tonight I made the bacon one with fresh herbs, broad beans and purple sprouting Brocolli all from the allotment. I always top with a mix of mozzarella and cheddar. Absolutely delicious :D

 

Anyone that makes their own pasta, I'd urge you to have a go at fresh penne too.

I do roll the pasta using a pasta machine..... Easier to get it thinner than rolling by hand.

 

As for how long it keeps..... I bulk make pasta balls and freeze them when I have an egg glut (100g of OO grade flour to one large egg)..... Fresh they keep for a couple of days in the fridge.

 

I think it's just as quick to roll your own as it is to cook dried pasta, as fresh pasta cooks far quicker.

 

That said, penne is very time consuming as each piece needs to be hand rolled.

 

Spaghetti you just put it through the cutter.

 

They have a great pasta maker in Lakeland for £22, you should do it Olly :D

la, la, la :whistle: can't hear you *hands over ears*.

 

I need to throw some stuff out of my kitchen cupboards, haven't got room for anything new. I might just pop over to the Lakeland site though.... just looking, you understand.
