OK, it was late and I was in a rush so probably didn't boil it enough; is it Ok to put it back in the pan and boil some more? I've not had this happen before. Mrs Frugal Posted September 3, 2007 Share Posted September 3, 2007 Try adding a little lemon juice to up the pectin levels a bit too and that might help. My crab apple jelly wouldn't set last year so I reboiled it with some lemon juice and it was fine. I automatically added some to this year's batch (all 11lbs of it ).
