Egluntyne Posted November 9, 2007 Share Posted November 9, 2007 Here you are. 1 kg frozen sweetcorn, defrosted 3 spring onions, chopped 1 clove garlic, peeled 35g semolina 1.5 litres hot vegetable stock made concentrate or cube and 400g lightly salted tortilla chips 200g grated cheese 2 long red chillis, deseeded and finely chopped.(optional) Pre heat oven to gas mark 6/200C Drain sweetcorn and put into food processor with spring onion, garlic and semolina. Blitz. Tip mixture into saucepan add hot veg stock and bring to boil. Turn heat down to a gentle simmer, partially cover and leave for 10 mins. Meanwhile, spread tortilla chips onto foil lined baking tray and sprinkle with grated cheese.. Warm in oven until cheese mentled 5-10 mins Ladle soup into bowls, top with chunk of cheesy tortilla chips, sprinkle with chilli's if using.
