Made the Victoria sponge at the weekend, never before have I been told to weigh the eggs then weigh the other ingredients out to the same weight as the eggs. My goodness did it rise . Sandwiched it together with some whipped double cream & raspberry jam. Absolutely gorgeous. Today bubbling on the stove we have the spicy bean & sausage stew, ready for tea & in the oven is the Honey & Ginger cake. mmmmmmmmm the smell is divine. Ordered it last week and it arrived this morning, so I'll have to put off my food shopping till tomorrow, once I've got my shopping list ready! Only thing wrong was the recipe says half a tsp of ground cloves, this made for a bit of over kill on the clove flavour. I will use a bit less next time.
