Guest
i don't have all the bits to make a stock just now so wanted to freeze the carcass to make a stock another day. Is it safe to do this?
Ain't Nobody Here
I can't see why not (but I'm no expert ). It would keep in the fridge for a few days if you can get the stuff you need soon.
chickencam
We do that with chicken and other meat bones, then when we have the time and inclination we make stock.
Lesley
It will be fine frozen - just squash it as much as you can so that it takes up less space.

kannie
Yes its fine. You can also roast the carcass to give the stock extra flavour (Hugh's recommendation). Hugh even recommends roasting the bones off people's plates, and then putting them in the stock pot too!
Eyren
Good idea on the freezing - we never seem to get round to making stock, which is a tragic waste, especially with an expensive Label Anglais chicken!
Laura & CTB
I made my first ever batch of chicken stock yesterday (I feel so proud ) can someone let me know how long I can freeze it for please?
chickencam
I think because you will boil it when it is used it can be frozen for a long time. Mine don't usually last long because I love soup
