Any ideas for receipes that use egg yolks? - my lot are loving meringues made from my surplus eggs, but that leaves the yolks - I add the extra yolks into scrambled eggs, or an extra one in a quiche, or use in a batch of homemade mayonnaise, but I am running out of ideas.

There's a nice recipe for biscuits made with egg yolks instead of whole eggs and they are lovely - recipe here or you could add some whole eggs and make lemon curd as that requires 4 whole eggs and 4 yolks. I've made half as much when I've only had 2 yolks to use up and have halved the sugar, butter and lemons too.

Hollandaise for asparagus. Bearnaise for a nice steak. Aioli for just about anything!

I only ever use yolks mixed with cream and parmasan, makes a lovely smooth sauce that never 'scrambles'. Jamies Oliver only uses yolks too...
