Squidgy Chocolate Log

Thought people might be interested in a chocolate recipe that uses plenty of eggs... :) It's flourless, which is good for wheat intolerance :) , but not much help to anyone on a diet as it's got lot's of 'naughty' things in it! :evil: Guaranteed to cause arterial suicide if indulged in too often, but what the hell!!! :twisted:

 

Squidgy Chocolate Log

6 large eggs, separated (beat egg yolks; whisk egg whites)

150g caster sugar

50g cocoa

225g plain chocolate (I usually use Green and Black's)

2 Tablespoons water

2 large eggs, separated (extra) (beat egg yolks, whisk egg whites)

225ml double cream (optional if you're being good)

Preheat oven to 180 degrees. Grease/flour/line a 29cmx18 swiss roll tin (around 2.5cm deep).

 

Part 1 - the chocolate mousse

Melt the chocolate and water together over a double boiler. Remove from heat, beat till smooth and add beaten egg yolks. Cool. Fold stiffly beaten egg whites into the mixture. Refrigerate for 1 hour.

 

Part 2 - the cake

Whisk 2nd measure of egg yolks with caster sugar and beat till thick and pale. Mix in the cocoa. Fold in the egg whites. Pour into tin and bake on centre shelf of oven for 20-25 mins. Leave to cool in tin.

 

Part 3 - the assembly

Dust a sheet of greaseproof paper with icing sugar. Lay the cooled sponge on top. Spread the mousse over the cake, and the softly whipped cream on top. Roll up carefully into a log shape. Dust with extra icing sugar.

 

Prepare a large pot of strong coffee....
