DEVONS CARROT AND RAISIN MUFFINS

Here is the recipe that my daughter Devon made at school this week.

Seriously delicious muffins!

 

 

DEVONS CARROT AND RAISIN MUFFINS

 

 

Ingredients

 

200g self-raising flour

75g sugar

125 ml milk

50g butter/margarine

1 egg

25g raisins

1 carrot (grated)

Pinch of cinnamon

 

 

Method

 

Preheat the oven to 210ºC.

Sieve the flour into a bowl, add cinnamon.

Place milk and margarine in a saucepan heat gently, until the margarine has melted. Do not over heat.

Add the sugar to flour, stir well.

Add the grated carrot and stir well.

Mix in the egg and milk mixture into the flour mixture, until the mixture is smooth and well mixed.

Spoon the mixture into the muffin cases.

Bake for 15 minutes, or until golden in colour and firm to touch.

Leave to cool.
