fermenting your elderflower champagne via a balloon?

Instead of adding to the long and lovely tail of the elderflower champagne/cordial thread, I'm introducing the idea of using a (large) balloon for managing fermenting.

 

Many years ago, I began making wine. The ingredients went into a demi-john (5 gallon jug?) and a balloon (have to admit it was a Casper the Friendly Ghost) was placed over the neck.

 

The fermentation process inflated the balloon and the end of the fermentation process was signaled by the balloon going all floppy (any anologies are irrelevant to brewing).

 

So, just a bit of info that you may or may not find useful!
