spratly0 Posted August 25, 2008 Share Posted August 25, 2008 Finished butchering an old spot this weekend - the head is quite small, so i think this piggy may have been a bit younger than we are used to having. Does anybody eat head to tail and have a recipe other than brawn as to what i can cook using a pigs head? I hate brawn but it's such a waste if we don't use it. Any ideas greatly appreciated. Lesley Posted August 26, 2008 Share Posted August 26, 2008 Hi - I've amended the title of your thread so that people don't stumble in, wondering what it is about If it is a small head then you may find it easier to use just the chaps (cheeks) There is a good amount of meat in them - you can roast them or make potted meat with them? ...or, take a look in some of the other self-sufficiency forums for advice - River Cottage is always good for that.......... little cluckers Posted August 26, 2008 Share Posted August 26, 2008 I tried to make brawn last year as my husband insisted he liked it, I spent ages boiling the head but the smell was AWFUL!
