Heathy Lunch Recipe (fish)

If you are not on the Healthy eating thread, I have been on WW for 5 weeks and am nearly a stone lighter, here is a lunch recipe I did the other day, it's not punishment diet food, it's just really nice!

 

 

 

Fab Fish al Fourno

 

You will need-

2-3 peppers per person

A packet of cherry tomatoes

1 white fish fillet per person

Herbs and seasoning

Spray oil

Harrissa paste.

 

#Roughly chop peppers mainly red into a ovenproof dish, and add cherry tomatoes.

#Spray with small amount cooking oil and add salt and green herbs (I like 'Good With Everything' Sea Salt with herbs) and fresh or dried chilli to taste (or leave out).

# Roast on a medium heat for 20-25 mins, until soft and starting to brown. Remove from oven.

#Spread Harrissa paste on top of fish fillets, and place them on top of roasted peppers.

#Return to oven on a lower heat for about 10 mins, until fish is just cooked through.

 

I weighed my fish on my WW scales and a normal fillet about twice the size of a mobile phone is 3 points, so for WW girls the dish comes in at 3 1/2 points.

The beauty of this is you can roast the peppers in advance, then add the fish and put it back in the oven just before you want to eat.
